Waffles!

Daniel has discovered how nicely frozen homemade waffles reheat in the toaster. I spent the morning stocking the freezer with breakfast for a couple weeks for him. This is my favorite raised waffle recipe. It’s light and crispy on the outside and meltingly tender inside.

1 cup warm water
4 cups warm milk
1 cup melted unsalted butter
2 teaspoons salt
heaping tablespoon honey
4 cups all-purpose flour
2 packages acive dry yeast

the next morning add:
4 large eggs
1/2 teaspoon baking soda

In a very large bowl, whisk together dry ingredients (except baking soda), then stir in the liquids and cover tightly with cling film. Let stand at room temperature overnight. In the morning beat in the eggs and baking soda and cook according to your waffle iron directions. I find it does not usually need cooking spray. My waffle iron makes crispy waffles in 7 minutes.

Chicken fricasse

Brown 2-3 pounds of chicken pieces in a bit of olive oil 4-5 minutes per side.  Stir in a pat of butter with about a cup of chopped onions, 1 cup chopped carrots, 1 cup chopped celery, and 3 tablespoons olive oil. Continue to cook until the veggies are soft. Stir in 1/4 cup flour and cook, while stirring, at least 60 seconds but not until the flour colors. Stir in 1 cup white wine and enough chicken stock to nearly cover the meat. Season with salt and pepper. When the chicken is cooked through, remove to a cutting board and shred the meat back into the pot. Stir in 1 cup green peas, a tablespoon of fresh thyme leaves,  and a handful of chopped parsley. Heat through and serve over hot cooked rice.

Marinated Salmon

The grill isn’t hasn’t fully emerged from the snow just yet so I opted to bake this marinated salmon and it turned out quite well. This recipe went over very well so I’m sure we’ll revisit it in summer and try it properly on the grill. I served just a simple steamed spinach and carrots on the side. Yum!

Biscuits

4 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
2 teaspoons salt
8 tablespoons butter
2 cups buttermilk

In a large mixing bowl, stir the flour, baking powder, baking soda, and salt together. Cut in the butter, mix until  crumbly. Stir in the buttermilk just until moist. Turn the dough out, sprinkle with flour, and pat out gently to a thickness of about 1- inch on a well floured board. Cut out 2-inch circles (about 15). Bake in a preheated 400F oven for 17 minutes.

For the gravy- break the sausage into pieces and brown in a cast iron pan. Remove the sausage with a slotted spoon and set aside. Add butter to make a total of 4 T fat. Whisk in 4 or 5T flour and cook over medium heat 60 seconds. Pour in 2 cups milk all at once while whisking rapidly and then cook with constant stirring until thickened and bubbly. Add salt and pepper to taste.

Polenta with mushroom tomato sauce

Polenta with tomato mushroom sauce is always a hit with guys. Sometimes I make soft polenta, sometimes I fry the polenta and sometimes I add meat to the sauce but it always disappears lickety split.

Orange Peel Tofu

Last night we had a delicious Orange Peel Tofu stir-fry for dinner. I made several small mods and it was really  lovely and for sure something I’d make again. I used hot pepper jelly in place of orange marmalade, rice vinegar in place of cider vinegar, 2 T of siracha and left out the garlic paste, and a whole onion. I added a chopped red chili and a handful of peanuts and used snow peas as my veg and orange slices. I served it all over rice noodles.

A little summer in my scones

I broke out some of the delicious raspberries and blackberries I froze last summer to make these delicious scones. I baked them longer than called for because those blackberries a very juicy but otherwise followed the recipe as written. I think some nutmeg and lemon or orange zest would be a wonderful addition.

Spinach Salad

Julie’s Spinach Salad

4 cups fresh baby spinach

2 oranges cut into supremes (squeeze the membranes over the spinach for a “dressing”)

honey roasted pecans (a little cayenne mixed in the honey is delicious)

bacon torn into bits

grated gruyere cheese

 

Focaccia

It’s been ages since I made focaccia so I gave this recipe a try and it was really delicious!

Raspberry cake

I still have lots of raspberries from last summer down in the freezer. I guess I’ve been slacking on the baking this year. This coconut-lime berry cake was absolutely delicious. I added nutmeg, used more berries, and I subbed Grand Marnier for the rum.
